Sunne bananpannekaker med mandelmelk / banana pancakes with almond milk
All sorts of pancakes belongs to a morning bliss, especially on a quiet Saturday morning while enjoying your first cup of coffee. These banana pancakes are often made when we have some a few overripe bananas left, and they give a natural sweetening to the pancakes. The recipe is suitable for vegans, or for those who have egg and milk allergy. I fry my pancakes in a teflon-coated pan, but feel free to use oil or butter of frying. Enjoy your morning! 🙂
Sunne bananpannekaker med mandelmelk / Healthy banana pancakes with almond milk:
6-8 stk små bananpannekaker / 6-8 small banana panecakes
- 2 stk overmodne bananer / 2 ripe bananas
- 4 dl mandelmelk / 4 dl almond milk
- 1 ts kanel / 1 tsp cinnamon
- 1/4 ts salt / 1/4 tsp salt
- 2 ts vaniljeekstrakt / 2 tsp vanilla ekstract
- 50 gram spelthvetemel, finmalt / 50 gram dinkel wheat
- 100 gram hvetemel / 100 gram flour
- 1 ts bakepulver / 1 tsp baking powder
Tilbehør / Topping:
- lønnesirup / maple syrup
- blåbær / fresh blue berries
Ha bananer, mandelmelk, vaniljeekstrakt, kanel og salt i en blender og kjør til en jevn blanding. Bland speltmel, hvetemel og bakepulver i en stor bakebolle og hell i banan- og mandelmelkblandingen over, og bland godt sammen til en jevn og tykk røre. Stek etter ønsket størrelse på pannekaker i en middels varm panne til de er gyldne.
Puree ripe bananas, almond milk, vanilla extract, cinnamon and salt in a blender until smooth and liquified. Mix dinkel flour, flour and baking powder in a large baking bowl and pour the banana and almond milk mixture into the dry ingredients and mix well until combined. Cook the pancakes in a medium hot pan until they are golden.
Dryss over med lønnesirup, friske bær eller syltetøy! 🙂
Drizzle some maple syrup and top with fresh blueberries!
